Lemon Coconut Moringa Protein Balls

1 c. sunflower seeds
1 c. walnuts
1/2 c. unsweetened shredded coconut
2 tsp. moringa powder
¼ tsp. sea salt
2 c. honey dates, lightly packed
1 tsp. vanilla extract
1/4 c. lemon juice (juice from 2 lemons)
2 T. coconut oil
Lemon rind from 2 lemons (should be organic)
Extra shredded coconut to coat balls

  1. In food processor, put the seeds, nuts, coconut, salt, moringa powder and dates and pulse until ingredients resemble crumbs
  2. Sprinkle across the top of the mixture the vanilla, lemon juice, lemon rind and coconut oil and pulse again until more thoroughly combined. You can leave the mixture slightly chunky or process until smooth. 
  3. Form into 1″ balls and then roll in shredded coconut.
  4. Store in fridge or freezer in air tight container
