Sour Cream & Onion Kale Chips!

Delicious Crunchy and Nutritious Kale Chips

It has been a busy summer! I have been spending a lot of time up north on the beach with no internet access.

It was so great to catch up with an old friend who came to see me from British Columbia (where I spent the first half of my life). I talked her into taking greens powder in the morning and after a few days she told me that her decades long chronic pain was magically gone! Wow, didn’t expect that! It just shows the power of giving your cells what they need. Most of us don’t eat a perfect diet, so greens powder every morning is a great way to quickly improve how we feel! If I don’t have time or ingredients to juice, I always make sure to take a good quality greens powder on an empty stomach first thing in the morning. My favorite brand is Vitamineral Greens which does not have that sickly sweet flavor, many brands do, it is just grassy which I find less disgusting.

Here in the Toronto area, we have had an unusually hot and humid summer and I have been slurping back a lot of green juice and fruit smoothies. I love throwing a couple of tablespoons of hemp seed into the blender or some soaked almonds and then adding banana and frozen fruit or cacao, maca (superfood adaptogen, great for your adrenals), and a scoop of Sunwarrior sprouted rice protein powder.

Sometimes, though, you need something salty and crunchy so I made a batch of these yummy Sour Cream and Onion Kale Chips in my dehydrator:

Sour Cream and Onion Kale Chips
1 large clove garlic
3 green onions, chopped   
Dash cayenne
1 T. tahini
1/4 tsp. sea salt
1 T. olive oil
1 T. soy sauce
2 T. water
¼ c. cooked brown rice or 2 T soaked nuts
½ lemon, squeezed
Puree all the ingredients in a food processor or blender, pour over large bowl full of one head torn kale leaves (save the stems for juice!) and stir to coat. I like to get in there with my (CLEAN) hands and rub.
Dehydrate at 105 until crispy – it will take a few hours. You can just keep checking but try not to sample them too much or you will not have any left to eat at the end!
You can also use an oven set on the lowest temperature, but may lose some enzymes. If you have a convection oven, the fan will also help dry things out quickly.
