Yummy & Easy Chickapea Protein Pasta!

Love pasta but want more protein and less carbs? This recipe is for you! It is delicious and easy to make, filling and packed with nutrients!

INGREDIENTS for SAUCE:

1 clove garlic, chopped finely
½ cooking onion, chopped
3 T. organic extra virgin olive oil
4 campari tomatoes
12 oz. whole cremini mushrooms, sliced
½ large container baby spinach, washed and spun dry
1 400 ml. can quartered artichokes, each quarter sliced once more in half
½  100 ml. jar capers, drained
2 tsp. tamari soy sauce
2 tsp. dried thyme
1 T. dried oregano
1 T. dried parsley

METHOD:

Chop garlic and let sit 10 min. Bring large pot of water to boil with 2 tsp. salt added to water. Cook pasta according to directions below while you are making sauce!

Heat olive oil gently over medium low heat, add onions and then mushrooms. Cook, stirring occasionally until onions are translucent and mushrooms slightly browned.

Stir in spinach & garlic, then add chopped tomatoes, artichokes & capers.

Combine with cooked pasta, prepared while sauce is cooking, and sprinkle to taste with sea salt & freshly ground pepper plus nutritional yeast, chopped walnuts or grated parmesan cheese.

COOKING the PASTA:

1 lb (1/2 kg) Chickapea pasta spirals

Cook in boiling, salted water for 9 minutes.
Drain, rinse with cold water, drain again.
Mix with sauce and enjoy!
