I have made lots of chia pudding in my time, but this one is special – slightly sweet and uber healthy with a great, thick texture!
Chia seeds are a true superfood – loaded with nutrition, including Omega-3 fats, protein, antioxidants, fiber, vitamins and minerals.
This delicious treat/dessert/breakfast contains protein, absolutely NO sugar of any kind, and is fantastic layered with fruit and a bit of crunch, such as some sliced almonds or sprouted buckwheat granola.
This makes a BIG batch, but trust me, you will not regret making a lot! If you end up with extra, it can be stored in the freezer and eaten as an ice cream substitute when that cold & creamy craving hits!
Sugar-Free Vanilla Coconut Chia Protein Pudding
2 cans organic full-fat coconut milk (I like Thai Kitchen)
1 c. non-dairy milk (I used almond milk)
1 scoop (2 T.) vanilla protein powder (I used organic, raw Sunwarrior Classic Plus Vanilla)
pinch sea salt
1 tsp. vanilla extract
¾ c. chia seeds (preferably white for appearance only)
*NOTE: If you prefer more sweetness, you can add a few drops of stevia or a little maple syrup, coconut syrup or raw honey to taste.
- Whisk everything together in a large bowl until well blended
- Refrigerate until thick (this takes a couple of hours)
- Enjoy!
That’s basically it – so easy!
