I stopped by Whole Foods a few days ago to pick up a salad for lunch and saw this product – tofu that is made from organic, non-GMO, sprouted soybeans!
For those who are a little prejudiced against tofu, don’t knock it until you have tried it – any recipe that features chicken can work with tofu. As a bonus, since tofu does not need as much cooking time, it will be quicker to make!
The texture of this product is a little softer than the usual extra-firm type of tofu, but it is otherwise very similar. I baked some 1/4″ thick slices for about 15 minutes in a 400 degree oven, after a short time marinating in a few tablespoons of tamari soy sauce, a few drops of roasted sesame oil and some garlic chile sauce. It was really delicious!
The Extra Firm SprouTofu is sold in a double pack. A 3 oz. serving contains 80 calories, 9 g. protein, 5 g. fat and 1 g. carbohydrates. It also contains 15% of the RDA of calcium and 6% of the RDA of iron. The slightly bad news is that Sproutofu is higher in calories and fat than regular tofu, but it also contains almost twice the protein.
This sprouted tofu also comes in single packs of Silken and High-Protein Super Firm. The nutritional profile differs somewhat, so read the packaging before you decide which one to purchase.
Sprouted tofu is higher in nutrients such as calcium, iron, and protein, lower in phytates (so absorption of minerals is not hindered), is more alkaline and is much easier to digest than regular extra firm tofu. It also has less phytoestrogens.
It is nice to have a healthy alternative to Tempeh!

I've never seen this product but will keep an eye out for it. We eat tofu at least a couple times a week. 🙂
