1 c. unsweetened vanilla almond milk (you can use whichever milk you prefer)
1/2 c. fresh coconut water
1/4 c. fresh coconut meat from a young thai coconut
1″ thick slice pineapple, with rind and core removed, cut into pieces
1 frozen banana
1/3 c. frozen blueberries
2 c. ice cubes
sweetener to taste
This drink is full of nutrition and antioxidants!
I like to blend the pineapple with the liquid and then add the other fruit gradually so everything is nice and smooth. I have also dumped everything in the blender at once, and that works too, especially if your blender has a strong motor (I have a Vita-Mix, which was probably my best kitchen purchase ever!)
With regard to the sweetener, I often use a couple of packets of stevia or a few leaves off my potted stevia plant, but you could use anything from honey or agave to brown rice, barley, maple or yacon syrup. If you like your drink a bit tart, you can skip the sweetener altogether!
You can vary this recipe to suit your taste and what you have on hand. I just happened to have recently paid a visit to Kensington Market and Chinatown in downtown Toronto and picked up a young thai coconut, which lends a rich tropical flavor to the drink, but you can substitute another cup of almond milk or water if you are out of thai coconuts!
