Summer in the city has been hot and sticky this year. The humidity and heat have been relentless and our first couple of weeks in our new abode, which has 4 levels, has been rather uncomfortable, since the air conditioning did not work and it took a couple of weeks to get anyone in to fix it.
In some ways, it was interesting to actually experience the season, rather than artificially blasting it away. The ice maker in our fridge (quite a novelty for the kids) has gotten a workout and we ate a lot of “uncooked” meals and wore as little we could get away with. I even resorted to sleeping on a mat on the lower level to escape the steamy top floor of our townhouse.
It is a great time of year to step away from the stove and enjoy lots of fresh fruit and vegetables in their natural state – raw and unprocessed. Some of my favorites are watermelon, blueberries and raspberries. I am also obsessed with a chiffonade of collard/kale salad with slivered red pepper or maybe some grated carrot and a dressing consisting of lemon or lime, olive oil, garlic, tamari and a dash of celtic salt. This is so delicious, full of nutrients and easy to make!
