My first ever completely raw sandwich!

Here is my lunch – avocado, mixed greens, tomato, cucumber and some dijon mustard. It was absolutely fabulous!

    Hi Gemma – thanks for your comment! I have to admit it is a bit of a challenge to eat, but it can be done. Yesterday, I tried the same sandwich with a sunflower garlic spread and that worked well. I always like to load on the fillings, but less stuff inside would also make it easier to hold and eat.

    Hi Jamie, the bread is kind of chewy and I would say it is kind of like a vegetable flavored wrap (you know how they have sun-dried tomato and pesto wraps in the bread section of the supermarket) with a slight rye bread taste.

    Looks yummy. My kids and I like tomato and cucumber with cream cheese on toasted whole wheat bread. Tessia likes to add olives to hers, i prefer onion, zack adds hot sauce or hot peppers. Yikes! When Sean makes them he uses the cucumber and tomato to make an open faced smiley sandwich. Cucumber is the eyes half a tomato the mouth.

    I love the idea of a smiley sandwich. The olives are an original idea too – did Tessia come up with that herself? Black or green?
